Strawberry Banana Mini-Pops


It's sweltering here in N.Y.C. today so we wanted to share one of our favorite frozen treats to cool you and your little one off. Easy, delicious and fun to make as a family, these mini-pops are one of our summer snack staples!
Ingredients:
2 ripe bananas, peeled and broken into large pieces
1 cup fresh or frozen strawberries
3/4 cup almond milk, or substitute a milk of your choice
1/4 cup cranberry juice
1/2 teaspoon vanilla extract
Equipment: Silicone ice cube tray with 1.25” square molds
Instructions:
- Combine the bananas, strawberries, almond milk, cranberry juice, and vanilla extract in a blender.
- Blend on high until smooth.
- Pour the smoothie into the ice cube tray and place in the freeze. After 1 hour, remove from the freezer and insert a popsicle sticks in the center of each cube.
- Return to the freezer for at least 3 hours or overnight to completely harden.
